Bending california pepper trunk

I’ve been messing with this for 7 years. It started as a straight 6 foot tree. I want to bend the top portion of the trunk but can’t decide what approach to take . It’s just too straight for my taste. It seems pretty flexible but it’s gotten a little too thick and I’m scared.

Some guy wires and a piece of wood in between can flex it like a bow.
I've tried this myself last winter by using two wood screws to which I connected a wire. Between the wire and the trunk I put a piece of wood and some rubber to protect the bark. The trunk bent pretty well.
I've been twisting/pulling the wire every month to get some more movement.

There is an Italian guy on youtube - I believe David Benavente, but I'm not sure - who uses this guy wire trick a lot.
