I haven't really worked on my ficus bonsais, so their branches are far too long and thick. The point that I want to cut them back to doesn't have any nodes or other branches, so I can't guarantee new branches will grow. Can I just cut the branches back to the point that I want? Should I leave...

I chopped back an ash over a month ago, but none of the new shoots would make an appropriate apex. Would it be okay for me to graft a branch from another ash to have as its apex, or should I wait? I've included a drawing of the tree and where I'd like its apex to be.
