I found a nice Elm in a field nearby. I'm wondering if in everyone's opinion,
it's too late in the fall to collect it. I'm going to prune it back quite a bit
and either collect it or let it winter over in it's present location.
What do you think?

I wouldn't do it now if you can wait till spring. I would mark it with some landscaping tape or something along those lines. I've spotted trees in the fall that I just KNOW I'm going to remember come springtime then had a terrible time finding them again.

Agreed...cut it back now, mark it, and get it in the spring if you can. Elms usually have a HUGE tap root, which runs quite a ways out from the trunk before you get to some decent feeder roots...be ready to dig if it's big!
