Got it from those beginner kits of amazon , and it's now 2 years ,it was growing so high , 5 days ago I cut it down a bit and wired it for trying to give it the shape , from all I read and seen On YouTube , but have no clue what I'm doing .

. .. cut the leafs , or just cut them to little small branches

....what is this brown on the Leafs branches mean ?

I think you should try and carefully cut the wire off. Making complete circles around the trunk like that is going to choke the tree. Here's a good video if you want to try redoing it afterwards: https://www.craftsy.com/class/bonsai-wiring-essentials/

As for pruning, your tree doesn't actually have any branches yet. Jacarandas have compound leaves, so each "branch" is actually just an individual leaf. You won't get any branching if you cut part of it off. I don't know what the brown parts are. If they brush off, they could be insects. Otherwise I wouldn't worry too much about it.
