The "S" shape of the trunk on this Chinese elm reminds me of the Stella D'Oro "S" cookies - and thus the name. I've let it grow out a bit and soon I will be pruning back branches for ramification. Not 100% what I'm doing, but this video shared by BobbyLane on a different thread was a great education and I'm ready to give it a try. Worst case, it will be like a bad haircut, but it will grow back.
