I checked today and there are already rooted

Why have you made the girdle one week before putting the soil around?

Is it a technique used for all species, or just for Crab Apples?

A week seems like a long time.

I have heard people wait a day to ensure any cambium that wasn't removed dries out/dies (to help prevent bridging).

I just do lots of scraping.

I waited that long because I only have time on weekends. I was surprise to see roots this early but it was a nice surprise I don't mind to have.
