What would you recommend are the best Cut & Healing Paste products to be used on bonsai trees?

Or really does not matter because basically they are all the same?

Nope, they are not all the same.
Color, consistency, quality and origin all matters.
People use from vaseline to duct sealant to nothing. It depends.

For me it is more to keep the edges of the cut from drying. I want the callus to expand outside the cut, rather than retract :)

I have used neosporin. Some results with keeping disease out and protects the cuts.
I‘m currently evaluating a concoction an old time Japanese gardener down the street recommended. Has a bunch of garden JBP and Mugo garden trees he designed/trained himself over the last 40 years.
He said try fine aquarium carbon/charcoal or crush it yourself mixed with water.

Many of us are now using "Top Jin" cut sealer as seems to be superior in healing the wounds. The red (200gm) tube will last a long time, especially if used for bonsaI. The blue(100gm) tube is also available, but it is more difficult to find.
