Anyone have Beech like this?

If you have American Beech (Fagus Grandiflora) I would be very careful. The American species doesn't like to be completely defoliated. You can do it, but you can get weird results and a very weakened tree...

I know Harry Harrington taps in in this technique while he says to leave the terminal bud alone and defoliate interior leaves only.
