There are generally more preferred species of juniper to work with, but folks do use this variety. Search user sawgrass as I believe he has more than a few examples here on Bnut. Yours looks usable for sure.

One of the options is definitely not a cascade right?

Probly not the best option......
But can't say it's NOT there.

It's hard to see if you have any foilage close to those trunk beginnings.....
