I'd have to say either pines, maples, or cedars. Pines b/c they are classic and adaptable, maples b/c they are amazing, easy to train, beautiful, can take a lot of mishandling, and just fun to grow, and cedars b/c...... Well I don't know; I just love them. All 3 species make fantastic bonsai.......I would rather not have to choose LOL.
