Japanese Maple Advice

How's it everyone?

I have a Japanese Maple that I chopped down a few months ago and it is growing very nicely.
This is my first experience with this and I am looking for advice on what to do with it right now.

Let it grow untouched and prune back in late Autumn/Winter?
Prune it back now/partially de-foilate and let it grow out again?

Is it too early in the process to start wiring or should I wait til next year to start the wiring process?

Any advice on this would be greatly appreciated.

I would wire the first 2 inches of the branches to ensure the angle is right. For the rest just let it grow this season I would say
 
No point defoliating if you want growth.
there are many different ways to develop JM as bonsai so do not expect to get consensus on what to do next.

JM regrowth tends to have long internodes. You need to decide what size and maybe what shape you want to develop. If internodes are too long that branch is not suitable to be structure in the tree and should be cut to the base now to get more restrained shoots with more appropriate internodes because future buds and branches will only sprout from nodes. I can see a few shoots in the pics that look far too long.
opposite branches are OK for broom style but In my experience do not make a good trunk/ branch division for most other styles. If working toward informal style I would be chopping the trunk at an angle behind a shoot selected as the new trunk.
opposite branches will probably also need to be removed but that can wait for a year or so.
The dead stump could be reduced now so the current chop can start to heal.
