Mature tree replanting yamadori?

Hi, first post and exuse me i havent been on a forum since 2013,

I have 2 big pear trees coming in that i could purchase froma orchard that is getting cleand out. Wich means they are ripped from the ground tomorrow. Its currently early fall in my country. What can i do to make sure they survive true winter as there is gonna be mayor loss of roots.
I eventually wanna airlayer parts of the tree to be than used for bonsai
Advice would be appreciated ❤️

You’re going to have to be more specific with your location (country state etc) and about the trees. For instance if they’re large and heavy, overwintering them could have different solutions depending on your winter climate
 
Right my bad i did not think of that.
So they are about 2 meters
Im from the netherlands so intermediate to cold winters. Would say heavy frost, rarely under the -5 as im in the south and my garden is in full sun, and my soil is brown clay

Height of the tree really has no bearing on collectibility. Trunk diameter at soil level is a better gauge. These don’t look all that large you can probably dig them up with a few roots (enough root mass to keep the tree stable upright) and mulch them into a garden bed for the winter.
