Bought this tree over the weekend - making it my biggest tree.

I've started cleaning and pruning a bit to just remove all the upward/downward and crossing branches.
Right at the top at the massive trunk chop there is already some reverse taper, so I would like to get that sorted out. not sure how much of the trunk I should remove.

looking forward to working on this one

If healthy, you can remove as much trunk as you like and it will bud back.

Thank you. I am considering reducing the trunk, but will just take some time to think about it.
Here summer is coming to an end soon, fall is pretty much still very warm so I still have a good 4 months before temperatures will drop - we have a very short winter.

when will be a good time for a trunk chop?

If you still have 4 months where they will still be in the active grow mode then I would go ahead and do it after it has harden off with the current grow.

will an air layer be successful with cork oaks?

I'm considering cutting on the red line. not sure if that is to hectic?
this will leave one side ranch and the a nice branch for a new leader

Yes, I have been successful with small branches, tried on a 3-inch branch and it didn't take, but I tried only once so far on a branch that big. Your branch is not that big, so you probably have a good chance of being successful. Good luck!

Updated photo. Apart from slight trimming here and there, I hadn't done any work on this tree.
with very good shoots low down, I am going to try the air layer this season.
At the lowest branch is now 4cm diameter
Base is at 6 cm

Also trying to get roots on 2 suckers at the base
