Olea europea - my first carving

Bought this olive in a nursery 6 months ago (I think it was about 15$)

It's been growing very healthy, so I have made a first styling. It came with a nasty straigth cut, so I decided to make a shari plus a bit of carving to hide the scar a bit.

It's very funny (to carve). I've been mixing my hand tools and my drilling machine, though I have to learn a lot to say I know how to.
I have to confess this is the least loved of my trees. It has big leaves and chaotic growing. Hope to learn how to tame it.

This olive is growing fine, but I have a question

As you can see, this olive is sprouting directly from the trunk in some places:

That is unexpected in my previous design.
Would you keep this new sprouts in the design, or elimate them?.
And if you would keep them, how do you advice to integrate them in the design?

Olive seem to bud from the trunk frequently. I usually rub them off, unless you want a branch to grow out.
If that is the case you would have to grow one out, so that it is thicker than the ones above it.

scuse me sir, but what's the height of that tree? i might have a short fat little olive soon (airlayer applied 3 weeks ago, hope i didnt fudge it) and have been considering a move like this to make the chop look less abrupt and obvious

It's about 20 cm from the rim of the pot....
