Pruning dormant trees

I have been reading about the results from pruning at different times. If top pruning a decidious tree when it is dormant takes away buds for the roots to send energy to, and therefore creates longer internodes with stronger growth. Which is best for growing trunks? Is it better to prune each year when dormant so more branches grow, or leave the branches each year to get larger so they can grow and get up into the wind?
