Removing Needles

Please let me know if I am correct.

On Pines, remove the needles that grow upward and downward and leave the needles that grow on the side if the branches.

Is that correct?

First "pines" is a "wide" subject There is this article however which covers 5 needle and 2 needle pines in general pretty good!

The answer, as is often with bonsai, is "it depends".

Different techniques are employed at different times during the training of the tree.

On some pines, JWP in particular, needles aren't pulled. If they are undesired, you cut them off very, very short.
