Sprouted these from seed with the plan to give them to their new owner yesterday, plans fell through and now I have a tray of these seedlings I have no idea how to care for further.

Do they need to be moved into smaller pots before they go home next week or can I leave them alone?

Make sure they are in 6 hours sun so they don't get leggy, another week in the cells is ok if you have to.

Pretty sure they can stay in those trays while they grow another pair of leaves. Last year, I grew 3m tall sunflowers to give shade to my other plants.
They are some of the easiest things to grow. I would say they need warm temperatures. But you are in zone 10 in Florida. So I could just plant them out in full ground and water them if there's no rain.
And see how tall you can get them.
Basically, the only worry would be to not move them outdoors too early when you start them indoors. And to provide enough light if you are indoors.

I wouldn't put them in pots because then you just have to keep repotting them over and over.
