Trees in ground - let's see if I have this straight

I have three conditions going right now, which is frigging stupid for a newguy but hey, I'm a glutton. Well, actually, four conditions but we'll leave the small potted plants out of this for now. My intention is to get all of these to develop trunk and nebari.

ONE: nursery trees still in three gallon pots. I have a maple, an azalea, a juniper, and a bristlecone which are happily living in nursery pots. My intent is to winter them in a cold frame and then put in ground in the spring. Grow in ground for 1-2 years then move to boxes. I want to air layer the maple and azalea, save the tops to put in yard and use bases for bonsai. Should I cut them and put in pond baskets/boxes, or put in ground for another year?

TWO: collected lilacs, with some fine roots, growing in a soil mix in pond baskets. Buds starting to push. Winter in cold frame and either leave in baskets or pot in spring.

THREE: Spruces (I think) in the ground. Planted as seedlings 7 years ago, now well-established with nice trunks. This is well before any inkling of bonsai. Wait for spring, collect and put in boxes. If the trunks are what I want now, I should be safe to prune some low branches and foliage before winter, correct?
