I have never before seen loblolly pines for sale in our area but the local Walmart has some in 1 gallon pots about 3/4" diameter trunks, 3 feet tall. Long trunks with foliage in the top half, but several have a small branch or bud within 6 inches of the soil.
Should I get a couple and try to grow them out? How are they going to react to our (typically) brutal summers?

No. You will have at best a straight trunk with angling sprout off side and who knows how far is straight below surface? Look for better start;).
