What kind of Juniper , Shimpaku?

Not so reliable from thick cuttings. They can take a long time to root - up to 18 months and best results are from thinner than pencil pieces.
Does not mean larger cuttings won't root though. Just less likely. Maybe you should try. You have the material so what have you got to lose?

Where did you get it? Maybe post some more photos when you get them potted and they’re sitting upright outside. I’m not seeing Itoigawa from these pix...Shimpaku, probably.

I second that it's not very clear. I have itoigawa, and regular chinensis and it could be both judging from the picture.

Looks like my Prostrata Junipers. It doesn't look tight enough for Shimpaku but I only have one to judge from.

If you got them from a landscape shrub, and you’re not in SoCal, I doubt it’s Shimpaku or Itoigawa. Both of those varieties are fairly specialized to bonsai. I agree it’s probably J. chinensis of some kind but that’s as far as I’d take the naming. The photo in post 9 does not suggest Shimpaku or Itoigawa either; they tend to have a more prostrate growth pattern, with long shoots radiating outward:
