Winter trimming shoots

Hello Friends,
I live in London and have this mug opine bonsai.

Can I do some trimming now? Some of the branches divided into multiple shoots this year. I was wondering if I can trim away the top new shoots and let the ones below grow.

I would have concern for part before this.

That branch looks to have branches closer to the trunk......woth needles close to the branch beginning.....

I'd be going in that far eventually...
So all this can get left if not shading that interior growth.

Probly hard cut after the summer solstice.

Can anyone speak to this with regards to Maples? I have some that are quite leggy, and trimming the shoots back would help make winter storage a lot easier.
