I saw this Chinese Elm at a bonsai shop and was wondering if it would be a good idea to put it into a larger pot and let the trunk grow thicker and then turn it into a bonsai when it's ready?

Yes, Chinese Elms can make great bonsai. They’re relatively hardy and easy to grow. They also grow quickly, so you can see results faster. I say go for it.
