From a festival stall it is very likely to be grown from seedlings so no cultivar name.
Even if it was cuttings from a recognized variety there are so mane that look similar you would be only guessing to apply any cultivar names to most JM. Without a pedigree they just become Japanese Maples.
That is not a bad thing. Standard JM seem to grow better than many cultivars. Pruning and care is the same for most JM so no need for a special name.
