Collected moss is getting funky and growing plants. Would you trim/weed or keep as is?

I see two things in the photos. The obvious broad leaf weeds should be pulled out roots and all. The small slender stalks with little capsules on the tops are the reproductive structures of the moss and should be left alone.
I was hoping that’s what was going on with the moss, the broad leaf weed including roots are getting removed today. Thank you
 
Those little invaders have been dealt with, roots and all. Thanks everyone, should look better for my first bonsai society meeting this Tuesday.

I would pluck out the weeds, and leave the moss as it is, maybe trim the edges.

I like that wavy texture, and if you do to, you should keep it like that. Remeber, bonsai isnt about followong set rules, you should do what pleases you
