Collected moss is getting funky and growing plants. Would you trim/weed or keep as is?

Trim? I would pull them.
I've let weeds grow one year. Their roots plugged the pot hole and in one case that killed the tree.
The bigger they get, the more they compete for water and resources with your trees.

Just weed them out by pulling and taking the roots.

I see two things in the photos. The obvious broad leaf weeds should be pulled out roots and all. The small slender stalks with little capsules on the tops are the reproductive structures of the moss and should be left alone.

I would pluck out the weeds, and leave the moss as it is, maybe trim the edges.
I like that wavy texture, and if you do to, you should keep it like that. Remeber, bonsai isnt about followong set rules, you should do what pleases you
