These are current grapes. I did a workshop at the California shohin convention with this type of grape.

These are 3-4 years old from cuttings. We have the mature vines that are 75+ years old .They are being picked for raisins today.They are used in baking.

My parents have arbors that are over 100yrs and I'm thinking of removing a very small portion. How easy/hard are they to dig out, as far as tolerance for removal, pruning etc...

I would take cuttings in the dormacy period( winter). They root easy and from large cuttings. Root in sand or a porus mixture.

Is it easier to dig them out and try to get a decent root ball, or graft?

Large cuttings is right! I have a couple of 6" diameter "cuttings" that were rooted in pure pumice.

You could dig the entire vine out . They tranplant well in winter.
