Well it seems the tree i want to remove is actually a dwarf spruce. Is it worth trying to chop? Most of what I saw in some quick net surfing doesn't seem to promising

Yeah....it seems to bulge quick.

I think these can be nice of started young and constantly maintained.

But cutting back anything already grown Seems more and more a fruitless endeavor.

Do it anyway!

I agree with @sorce , if you don't have experience collecting trees from the ground, it could make for good practice to see if it'll survive.

No low branches or foliage on this. Where were you planning on "chopping" it? You shouldn't take off more than half of the green on a spruce or you kill it.
And then at some point you got to dig it up and hope it survives that endeavor. Ever collect a tree?
And these trees make poor bonsai at best. They don't backbud very well. And if you want to put any shape into the branches you will be in an uphill battle.
Don't waste your time.

I think it would only be worth taking if you wanted to have it as a niwaki/garden tree. If you have the room for a large potted tree in your yard, it's better than just pitching it. Then you can shape it more easily, because as the others have said, this is not really bonsai material.

I have a Alberta dwarf spruce, it sits in a small pot. It is going to be my Christmas tree next year, if it survives FLA summer. Definitely useless for bonsai. But a cheap way for a Christmas trees. Ha ha

I really like the niwaki idea. It is currently planted in my front yard so I could do it in place. Suggestions for more info?

I read a book by Frederique Dumas, it is a helpful start. www.japanese-gardens-and-niwaki.com/ Another gardener is an englishman named Jake Hobson, www.jakehobson.com/ also www.niwaki.com/ I have some photos I took of some basic designs for different niwaki/cloud trees, when I locate them I will upload them here.

I have been checking out online sites and pictures. I am going to give it a try. Worse thing that could happen is I kill it. I will post pics of the progression
