Help! Schinus molle

Hi all, I need an advice on pruning my pre-bonsai schinus molle.

I repotted it in October last year when I received it, and have been kept indoors in an unheated room throughout these months.

I live in Italy, and I didn’t expect that by this time the plant is already sprouting new leaves after such short dormancy. In fact, it's already 12⁰c outside.

I googled some time ago that it should be pruned during early spring to encourage branching, but it's technically still winter here. So, should I wait til then before pruning it?

Pruning is rarely confined to a single season. Being indoors changes the seasons anyway. If the tree is growing you can trim if you want to.
Schinus molle is pretty tough. Down here they grow as weeds along roadsides and cope with some very dry conditions. I'd put this species in the 'hard to kill' category so a trim now won't hurt it, especially as it is indoors.
