Here’s my thoughts- work slowly to chase the foliage back.
I might put it in a little deeper and wider pot to get it growing vigorously.
Then I might attempt to cut the roots- slowly.
And grow them back out differently.
The key would be to do this on a healthy tree and always leave some active roots on the tree.

Were it mine, I'd try for something drastic like this :D

It's hard to see the 3D tree from the few pictures, but I'd aim to keep that left fork and build the canopy off that. That puts the main curl into a fun little quasi-cascade. I don't honestly know if benjamina will have issues with the loop or not. The foliage is above the roots so not "below horizontal" but it might pool hormones in that loop and have some issues. I'd only worry about it because of reports of below horizontal branch dropping.

If there were enough flex in the trunk, I'd even try to get the loop to be even more of a cascade...but keep upward trunk roughly straight and still build the canopy off the fork. I'd probably aim for a larger canopy than I have drawn too.

Root the cuttings!
