Room in Seedbed, zone 6, What would you plant

Ok, here is my situation. One of my outdoor seed beds is empty and the other is full of Japanese maple seeds. This is the only way I will ever grow maple again. Inside, not enough space and too many problems. Now these beds are made to be rodent proof for anything from mice to squirrels and they have proved to be. I really need to plant the empty bed and though it is late, it is not too late.
So if you were in my shoes, what seeds would you plant, assuming you could find them? I was about to order some seeds but last minute decided to let you all help with my decision making.
