I started an air layer in the middle of July and have a question about leaving said air layer over the winter and seperate in Spring.

Basically I'd like to know if this is something I should do or do I risk the already successful amount of roots the layer has produced to the frosts we get here in the middle of the UK.

If I should just leave it alone should I wrap it up some more and maybe even cover with a dark plastic bag as well

Why not separate and pot the new layer in a pot. Then you can stop worrying about it.
If you want to leave it on the tree over winter, just wrap it up in something that will insulate the layered roots.

And, finally, a warning. At this stage the new roots are taking a lot of water. Make sure you keep the layer damp. I've lost a few good layers at this stage because they dried out too much.

Separate now. Plant in the pot properly. Protect it from the wind. The plant will do just fine. It will grow a lot of new roots until the frosts arrive.
