if you just let it go? Leaves are evenly and closely spaced and it would be a nice addition if it developed bark.

Yes. Eventually you can separate it via root division and form another tree as well if you want to go that route. Or grow yourself a clump. If it’s suckering now it’s likely that it will continue doing so from my experience with quinces.
