The wedding bouquet bonsai

I'm quite happy with this one. A couple of years ago, my brother-in-law got married and, unknown to the couple, I saved as much as I could from the bouquet. Most of them died - they'd been cut and then spent all day with only some wet kitchen towel for moisture, so it wasn't too surprising. One solitary cutting survived and rooted, and it's now big enough that I've stopped worrying so much about it dying and starting o consider what to do with it:

I'm currently thinking I should pinch off those long trailing bits to either side to encourage more central growth?

I'm not totally sure of the species, to be honest, or even the genus - I think it's a cypress/false cypress? Im definitely still very much an amateur.

Anyway, regardless of the species I think it will make a lovely anniversary gift one day - I think the 5th is traditionally wood?

It looks very much like the thuja I have.
Not great because the fronds are a headache, but the trunk is easily bent and can take awesome shapes!
