Chop it in pieces. Plant, wrap in foil and put it in a warm spot. Next year, do looooots of carving.

Olive wood is hard and polishes well. Rings cut from a stump make great display stands.
The trunks could yield good wood for turning projects or if you are able to mill into boards you could make more display stands.
